Can you explain the trick for retaining vibrant green color from blanched broccolli?

Answer:

Retaining the viral green color after you blanche the broccoli, put it into an ice bath, um, make sure it's cooled down in that ice bath and you get that really bright green color to be able to stay and it doesn't continue cooking anymore. Um, as if you just kept it in the pot when you're ready to put it into something else, just heat it up at the end, right? So if you're making a stir fry, put it at the end of your stir fry so it heats up, but it doesn't continue to cook a lot. Definitely don't put it in something like a super as stew where it's gonna cook for an hour or two as well. So put it right in at the end of a dish. If it is gonna be at a super stew, put it right at the end as well too.
