Can you give advice on how to choose what egg substitute to use when trying to veganize a recipe that calls for eggs?

Answer:

Kathy, that is a big question. And you're right when you ask how to choose, because there is no one size fits all. I see charts all the time, all the time. And, um, it, you have to think about what is the function of the egg. You're replacing the liquid's. Easy binding is easy flavor. We can do something about flavor leavening, we're gonna use some extra baking powder, baking soda maybe, and vinegar. Um, but we have an entire unit in essential vegan desserts, of course on replacing eggs because that's the thing that people are the tend to be, when people look at vegan desserts, they say, how do you, how do you do that? And actually, it's not so hard. It just isn't really difficult.
